It required a trip to Whole Foods this morning (oh darn!) for ingredients like agave nectar and different kinds of apples. The book actually has you roast the apples in the oven before you make the muffins. You should have smelled my house during this process! Heavenly.
The muffins turned out perfect! They are moist, flavorful & not all crumbly like so much gluten free bakery is.
Now, to get someone to take me to New York City so I can find the Babycakes bakery & indulge! Until then, I'll just keep trying out their recipes. This one is a winner!
